Summer squash is the unsung glory of this season. Unlike the winter ones, summer squashes have thin skin, require no peeling, and can be eaten raw or cooked. Or your own garden produces in abundance. Try a Yogurt-Dill Dip: Mix plain Greek yogurt, dill, garlic, lemon juice, S & P. Done. Make it into bread. Cold soup: Combine 4 cups chopped yellow squash with 3 cups water and vegetarian or chicken boullion, plus garlic and a sprig each of rosemary and thyme. Cook until squash is tender.
